According to the CDC, each year foodborne illness impacts roughly 1-6 americans which translates to about 48 million people who are affected. Over 128,000 people are hospitalized annually and over 3,000 people die from some type of foodborne illness. Food safety in the U.S. is a major issue and should be top of mind for the restaurant industry.

We had the pleasure of meeting this week's guest at the latest National Restaurant Association show. Our guest will discuss his experience with food safety and some of the research that he has done in the area.

In episode #054 of the Social Restaurant Podcast, I welcome Kevin Roberts Associate Professor & Director of the Undergraduate Program in Hospitality Management at Kansas State University. Kevin has over 12 years of experience in the restaurant industry and has been teaching at Kansas State for 13 school years.

Dr. Roberts is an expert in food safety research and training and focuses specifically on overcoming employee barriers to food safety implementation in the commercial foodservice setting. He is the Director of the Center for Excellence for Food Safety Research in Children Nutrition Programs at Kansas State and member of numerous industry organizations including the International Association of Food Protection, the National Restaurant Association and the Foodservice Management Education Council.
